1 pound lean ground turkey (about 93% lean), chicken or ground beef will also work

1 egg, slightly beaten

1/2 cup diced yellow onion

1/2 cup diced sweet red bell pepper

1 cup whole grain bread crumbs, whole wheat panko will also work

Kosher or sea salt to taste

1/2 teaspoon black pepper

1 teaspoon dried oregano

1/3 cup tomato or vegetable juice (recommend without refined sugar)

1/3 cup ketchup

Tip: For simple removal from the slow cooker, tear two pieces of aluminum foil, about 3-4”, fold in half lengthwise and place crisscross underneath the meatloaf prior cooking. 5-7 quart slow-cooker recommended.



  1. In a large bowl combine all of the ingredients, except the ketchup, and mix well._MG_2479-web
  2. Lightly spray the bottom and sides of the slow cooker with nonstick cooking spray.
  3. Shape mixture into a loaf and place in the slow cooker. You may need to reshape a little after placing it in the slow cooker.
  4. Cover and cook on low 5-6 hours. Add ketchup to the top about 30 minutes before the end of the cooking time.
